Poché's
Breaux Bridge, St. Martin County · Louisiana
Poché's began in the 1940s, when Floyd Poche's grandfather sold pork, boudin and cracklins from pigs he slaughtered himself in a small store at Poché Bridge on the Teche. Floyd bought the business from his father in 1976 and has grown it more than tenfold. The boudin recipe has drifted with the years: the liver flavor is milder, and fresh jalapeños replaced cayenne as the heat. The market now makes andouille, turducken and crawfish boudin, runs a lunch counter, and ships from a USDA-inspected plant.
